Canada produces some of the world's finest wheat, yet many specialty flour products are still imported. We're investing in Italian milling technology so more premium semolina and 00-style flour can be produced right here in Canada—using the exceptional grain grown on the Canadian Prairies.
When will the new mill be operational?
Construction is underway, and we're currently welcoming businesses interested in securing future wholesale supply. Joining our wholesale program now allows us to better understand demand as production ramps up.

What products will be available?
We're not replacing our current flour lineup—we're building on it.
The new mill adds premium semolina and 00-style flour to our existing range of stone-milled products, giving our customers access to an even broader selection of specialty flours made from premium Canadian grain.
What is Semolina Flour best used for?
Semolina is milled from durum wheat and is known for its beautiful golden colour, rich flavour, and high protein content.
It's ideal for fresh and dried pasta, semolina breads, pizza, couscous, and a wide range of specialty food applications.
What is 00-Style Flour?
00-style flour refers to an exceptionally fine grind inspired by traditional Italian flour. It's prized for silky texture, excellent dough extensibility, and the ability to produce light, airy crusts and delicate pasta.
