Chocolate Banana Muffins

Ingredients

2.5 cups of Harvest Moon Mills All-Purpose Flour

1 cup of packed brown sugar

1.5 teaspoons of baking powder

1 teaspoon of baking soda

1/2 teaspoon of salt

2 eggs
-
1 cup of milk + 1/2 teaspoon of lemon juice (substitute for buttermilk)

1 cup of mashed bananas

1/3 cup of vegetable oil

1 teaspoon of vanilla

3/4 cup of chocolate chips
Directions
In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt. Make a well in the centre.
In a separate bowl, beat eggs, blend in milk, bananas, oil and vanilla.
Pour the wet ingredients in the well of the dry ingredients, stir just until dry ingredients are moistened.
Spoon mixture into greased muffin cups. Fill 3/4 full.
Add muffin cups to greased muffin tins.
Bake muffins in the center of the oven at 375 degrees Fahrenheit for 20-25 minutes.
